The estate belongs to the Barrier family since 1850 when the phylloxera destroyed their entire vineyard. Robert Barriere, the grandfather of the present owner, is the first president of the Sauveterre winery. Then comes the frost of 1956 where all the vines were replanted again. Merlot and Cabernet Sauvignon are worked in a reasoned way, without chemical fertilizers in order to perpetuate the tradition of the ancestors, giving a fine wine, fruity and colorful.

Rose petal color. The nose is rich and intense and offers a blend of white pear fruit and flowers with subtle citrus notes. The mouth is well- balanced, the perfect mix of roundness, and freshness with an elegant fruity finish (strawberry, raspberry), very easy drinking.
The grapes are picked at the coldest hours of the day, de-stemmed, and crushed before pressing (pneumatic press). The free-run juice and the best press juices are blended. The fruit aromas are developed using very low temperatures (stainless steel tanks equipped with an automatic cooling system) and a slow fermenting process.
Moment de Plaisir goes pretty well with Seafood, Salads, and white meat. But Moment de Plaisir is always a “Moment of Pleasure” as an aperitif!

The first step is the press; soft and pneumatic presses are used. The juice from the press, 100 liters for 150 kg maximum, are separated into Goutte and Rebêche wines. Only Goutte wine is concerned for Crémant.
The second step is settling, vatting refrigerated for decanting for 48 hours minimum. The clear juice is kept for Crémant.
The third step: the clear juice is fermented in regulated stainless steel vats. Fermentation takes place for good aroma retention around 16 °C/60°F. As soon as the fermentation is completed, the wines are racked and filtered. At this stage, it is wine, called Vin de Base
The first historical producer of base wine, producing the largest volume in the Bordeaux region and with its experience in the field of bubbles, La Cave Louis Vallon is today positioned as one of the best producers of sparkling wines.
The know-how of the winegrowers, a well-mastered wine-making process and the implementation of suitable technical means are all factors which allow it to respond as well as possible in terms of quality to the demand of this booming market. Louis Vallon Crémant de Bordeaux Blanc Brut, as required by the appellation, meets strict specifications. Harvests are exclusively manual, and the grapes are transported in openwork boxes.
The production method is traditional, following the Champagne method: pressing, first fermentation, second fermentation in the bottle, aging, riddling, disgorging and drawing. Louis Vallon Crémant de Bordeaux Blanc Brut is aged for at least 12 months on slats so that its aromatic and taste qualities develop.
Its sugar cane nectar comes from the selected reeds of San Pedro de Macoris, Dominican Republic Distilled in the only modern distillery in the country, where the alcohol is obtained from the direct fermentation of 100% Dominican cane juice. Aged in American Oak barrels for 5 years

Made from the traditional grape varieties of Provence, this rose wine is grown on clay- limestone terroir on the slopes of the Provence mountains. Harvested at night, the grapes are pressed gently, no maceration, to reach a very pale pink color. The fermentation is done at low temperature to keep the freshness of the delicate fruits and floral notes.

Shallow clay-limestone soils North exposure Dry and cool climate This emblematic wine is above all a worthy representative of its terroir. It comes from a selection of our most beautiful parcels. All these parcels are located on the limestone areas of the estate and give this wine its characteristics profile: aromatic complexity, a long finish and minerality.
The robe is luminous with a pale peach color. The nose is fine and complex. It has notes of lemon and fruit in syrup (peach and apricot). The palate is fresh, lively and fruity. An airy and elegant wine with a great aromatic persistence.
The grapes are harvested during the coolest hours of the night to preserve the aromatic intensity of the grapes. The juices are obtained after direct pressing. Each variety and each plot are pressed and vinified separately and the work done in the cellar is adapted to each tank. After alcoholic fermentation, the wines are tasted and blended for a first bottling in early December.

The presence of marine fossils in the Euganean Hills area reveals their origin:

Production Technique: The grapes are harvested medium to late maturation. They are pressed and subjected to prolonged maceration with temperature control. It cannot be in the market before March 1st of the following year.
Sensory Analysis: Wide and well structured wine. The color is intense red, with slight purple shades and orange tendency with aging. Vinous fragrance with intense scent, a bit of cherries. The flavor is dry, full, sapid, soft but with light tannic.
Bottling: It is bottled using the cold sterile microfiltration technique.

The estate belongs to the Barrier family since 1850 when the phylloxera destroyed their entire vineyard.
